Vitelotte purple potatoes

Appearance and flavour

Vitelotte (also known as Vitelotte noire) is an heirloom variety of French origin, grown for more than two centuries. The tubers are elongated and medium-small, with dark, almost black purple skin and deep purple flesh, often marbled. The flavour is delicate and slightly sweet, with hints of chestnut and hazelnut.

Growing area

Our Vitelotte potatoes are grown in Italy, in the mountains of the Calabrian plateau. The cool highland climate allows the tubers to grow slowly, developing a full flavour and an intense colour.

In the kitchen

The floury flesh, rich in dry matter, makes Vitelotte perfect for mash, gnocchi, soups, oven-baked chips and potato salads. Its real strength is the colour: it stays purple even after cooking and turns any dish into a feast for the eyes.

Our tip: to keep the colour at its best, cook them with the skin on, steamed or baked. If you boil them, the water will turn purple: this is completely normal.

Why it is purple

The colour of Vitelotte comes from anthocyanins, natural pigments also found in blueberries, blackberries and red cabbage.

Keep the potatoes in a cool, dark, dry and well-ventilated place, away from onions and fruit. Avoid the fridge, which alters their flavour and texture.
